50 gm unsalted cashew nuts , unsalted and roasted
3 skinless cooked chicken breast fillets, cubed
100 gm dried apricots, thinly sliced
100 gm Rocket or mixed salad leaves
1 mango, peeled and sliced
Dressing
85 gm yogurt
2 tbsp mayonnaise
2 teaspoons mango chutney
1/2 tsp tomato paste
1/2 tsp thai red curry paste
15 gm ginger, finely chopped
1. In a large bowl, make the dressing by mixing together the yogurt, mayonnaise, mango chutney, tomato paste, thai curry paste, ginger.
2. Add the chicken, apricots to the bowl and lightly toss together until everything is well coated.
3. Spread the green leaves and mango on the serving dish and spoon the chicken mixture on top of it. Garnish with chopped cashews and a dash of lemon.
