1 tbsp vegetable oil
1 onion, chopped
3 garlic cloves, crushed
500 gm sweet potato , peeled and cut into chunks
1 tsp cumin powder
1 tsp coriander powder
½ tsp turmeric
1 tsp paprika powder
1 tbsp ginger, finely chopped
400 gm tomatoes, chopped
100 ml veg stalk (with no salt)
1 cup peas
250 gm paneer, cubed
Salt to taste
1. Heat the vegetable oil in a large frying pan and fry the onion and garlic gently for around 4-5 minutes until tender.
2. Add the sweet potatoes and cook for 2 minutes then stir in all the spices and the and ginger, cook for around 30 seconds. Add the salt according to taste.
3. Stir in the tomatoes and add little bit of the stock. Bring to a boil, then reduce the heat and cook for around 15 minutes until the sweet potato is tender.
4. Stir in the peas and cook for 3 minutes and the add the paneer. Cook for another 2 minutes. Garnish with fresh coriander and serve hot.
