For the dough
1 kg flour
5 gm baking powder
Salt to taste
2 eggs
100 ml oil
800 ml water (approx)
For the filling
1 kg sweet potato, boiled and peeled
2 onions, chopped
1 tsp red chilli flakes
2 green chillies
1 tsp paprika
1 inch ginger, finely chopped
3 cloves garlic, finely chopped
1 tsp black pepper
Salt to taste
For the dough
1. Combine the dry ingredients in a bowl. Whisk the eggs and oil together.
2. Add the egg oil mixture to the flour mixture and start kneading. Gradually add water and make knead until smooth. Place in an oiled bowl for 4-5 hours.
For the filling
1. Dice onion and sweat in pan with all the other ingredients.
2. Mix onions and spices with sweet potatoes and mash slightly.
Assembly
1. Roll out the dough into 3 inch pieces each with 1 inch thickness.
2. Place small amount of sweet potato mix in the middle of each circle and fold over into a half moon shape and pinch tightly around the edges.
3. Boil the pierogi first and then pan fry it until crisp. Serve hot.
