For the sauce
3 cups tomatoes, diced
1 onion, chopped
3 cloves garlic, chopped
1 tsp cumin
2 tsp chilli powder
Salt to taste
1 tbsp oil
For the filling
1 cup uncooked green lentil, washed
1 cup uncooked brown rice, washed and soaked
2.5 cups vegetable broth
10- 12 tortillas
3 cups shredded cheddar cheese
For the sauce
1. Mix all the ingredients in a blender and blend until smooth.
2. Keep aside.
For the filling
1. Place the rice and lentils, sauce and broth in a pressure cooker with enough water.
2. Cook for 3- 4 whistles, lowering the heat after the first whistle.
Assembly
1. Heat a pan and toasted the tortillas on it. Layer the tortilla with 3 spoons of shredded cheese, 4 spoons of filling and 2 spoons of cheese.
2. Fold the tortilla and cook on both sides for 3-5 minutes or until golden brown.
3. Once cooked, Cut and serve hot.
