3 cups chickpeas, cooked and drained
1.5 cups roasted red bell peppers
1 jalapeno, seeded, diced
1 tbsp chopped garlic
3 tbsp chopped cilantro leaves
1 tsp paprika
3 tbsp chopped onion
1 tsp freshly cracked black pepper
1 tbsp chipotle pepper in adobo
1/4 cup extra-virgin olive oil
Groundnut Oil 1. Mix all ingredients, except olive oil and pita bread, in food processor until pureed, then slowly add in olive oil.
2. Let it sit for 1 hour prior to serving.
3. Serve with toasted pita bread or with fresh vegetables.
